We’ve been picking tomatoes every day lately. Kilograms and kilograms of them. We’ve been taking them down to the post office to sell them (also the unofficial shop), as well as selling them directly to locals, and cooking them up and freezing them to make soup this winter. We’ve even tried drying them.

Fresh Corn Salad
Yes this corn salad also has lots of sweet juicy tomatoes. I use all different varieties – little tommy tomatoes, and huge fleshy ones – all heirloom varieties, because they look beautiful and taste amazing. In this recipe the colours and flavours just scream late summer, or early autumn to me.
Spicy Tomato Sauce
This was one of the first recipes I ever tried when we first moved to the country. Our tomato harvest was small compared to how much we grow now, but we still had a little excess so I made a few jars of sauce. Since then, I’ve made the sauce several times, and I get lots of emails from people telling me that they have made it, and how delicious it is. Definitely a great way to use up some tomatoes.
Roasted Tomato Soup
Roasted Tomato Soup is a staple of our winter diet. We roast the tomatoes during March by halving the tomatoes and popping them in the oven for several hours. When they cool down, we put them into freezer bags and freeze them until we need them for soup. The roasting concentrates and sweetens the tomatoes, and the soup takes only a short time to make.
Roasted Tomato And Mozzarella Tart
The juicy acidic tomatoes contrasts beautifully with the creamy mozzarella in this fresh summer tart. The drizzle of balsamic vinegar and the fresh thyme just add to the perfection.
