It has been a while since I put together any of my own recipes. It is not that I haven’t been cooking but more that I haven’t been making new things. So on Saturday afternoon, after a rainy morning planting tree, I got a flash of inspiration when I saw a packet dried cranberries in the pantry.
These are yummy, and if you don’t like macadamia (and even if you do) try replacing them with white choc chips. I think they would be gorgeous like that!
Ingredients
250g butter – softened
1c brown sugar
2 eggs
1t vanilla
2c plain flour
1t baking powder
1 1/2c oats
170g packet dried cranberries (craisins) roughly chopped
1c macadamias – roughly chopped
Method
1. Preheat oven to 180*c
2. Cream butter and sugar together until pale
3. Add eggs and vanilla. Beat until combined
4. Stir in flour, baking powder, oats, cranberries, and macadamias to form a soft dough
5. Place teaspoons of mixture onto trays lined with baking paper.
6. Bake for 8-10 minutes.
P.S how cute are those little red striped cups. I found a shop which had lots of different type when I was in Wolongong a few weeks back, and just had to stock up.
