Roasted Tomato And Mozzarella Tart

Serves: 6-8
  • 2 sheets puff pastry
  • 4-5 tasty ripe tomatoes - fleshy tomatoes work best.
  • 300g fresh mozzarella
  • 1 garlic clove
  • 1T milk
  • 1 t thyme
  • salt and pepper
  • 1T caramelised balsamic vinegar to serve (optional)
  1. Line a tart tin with the puff pastry.
  2. Brush all over with the milk
  3. Finely chop the garlic
  4. Slice the tomatoes into 0.5cm thick slices
  5. Slice the mozzarella into the same thickness.
  6. Spread the finely chopped garlic over the base of the tart.
  7. Layer the tomato and mozzarella alternately over the garlic to form one layer.
  8. Sprinkle with thyme and season well with salt and pepper
  9. Bake in a 200*c oven for 20 minutes or until the pastry is puffed and crispy.
  10. Drizzle with a little caramelised balsamic vinegar just before serving.
