Flourless Chocolate Orange Cake

A fudgey chocolate and orange gluten free cake
  • 2 oranges
  • 100g dark chocolate
  • 100g butter
  • 8 eggs
  • 1½ c castor sugar
  • 300g almond meal
  • ½ c cocoa
  1. Place the oranges in a saucepan of water and simmer for 30 minutes.
  2. Cut the oranges in half and remove any seeds. Allow the oranges to cool.
  3. Place the whole orange in a food processor and pulse until smooth.
  4. Melt the butter and chocolate together in a bowl over a saucepan of hot water. Allow to cool slightly.
  5. In a second bowl, whisk together the eggs and castor sugar until well combined.
  6. Stir the orange puree through the egg mixture
  7. Stir in the almond meal and cocoa.
  8. Stir through the chocolate and butter mixture.
  9. Pour into a 22cm lined spring form cake tin.
  10. Bake for an 1 hour 15 minutes at 180*c.
  11. Allow to cool in the tin.
  12. Dust with icing sugar and serve with cream or ice cream.
To make the orange garnish, thinly slice one orange into rounds.
Heat ½c sugar and ½c water together and bring to the simmer.
Place the orange rounds in the syrup and allow to simmer for 10 minutes. Leave the orange rounds to cool in the syrup.
Drain before serving.
