Home Made Pizza Pockets
Make your own pizza pockets for kids lunch boxes
Recipe type: Lunch box
  • Dough
  • 1½ cups warm water
  • 2t yeast (14g)
  • 1t sugar
  • 2T olive oils
  • 2t salt
  • 4c plain flour
  • Filling
  • 200g of cheese - grated
  • 3 slices of ham - diced
  • 1small tin of pineapple - finely chopped
  • 2T tomato paste
  • 1T chopped fresh herbs
  • 2T milk
  1. Place the warm water, yeast, and sugar into a large bowl. Place in a warm place for 5 minutes.
  2. Add the remaining ingredients and mix to form a dough.
  3. Knead the dough on the bench for 10 minutes until it is smooth, and elastic.
  4. Place the dough back into the bowl. Cover with cling wrap, and place in a warm place to allow the dough to rise. The dough should double in size.
  5. Mix all filling ingredients together in a bowl.
  6. Turn the dough out onto a clean bench, and knead again
  7. Divide the dough into 12 equal sized balls.
  8. Roll one ball of dough out into a circle.
  9. Place a heaped spoonful of filling into the centre of the dough.
  10. Brush a small amount of milk around the edge of the dough, and then use your fingers to crimp it together to form a semi circular parcel.
  11. Place the parcel on a baking tray.
  12. Repeat with the remaining ingredients.
  13. Allow the parcels to sit for 20 minutes in a warm place to allow the dough to rise again.
  14. Bake at 200*c for 20 minutes until lightly golden.
