It’s meant to be one of the warmest Springs on record in these parts, and I would certainly believe it. We are having warm days, and even the nights aren’t as cool as they used to be. The days are getting longer, and the six o’clock rush to get dinner on the table comes up very quickly too. With the warm weather, we have been enjoying lots of light and easy meals eaten outside on the veranda. No matter how long and hard the day has been, eating dinner on the veranda in the late evening light makes me feel contented and relaxed every time!
Here are some of my favourite Spring dinners for you to try too!
- Quesadillas – we love ours with chicken and corn, but I’ve made them with all kinds of fillings. Just last week I did spinach, cheese, and tomato salsa with the kids at work. They hoovered them up.
- Chicken and potato korma – Meg is going through a fussy eating phase at the moment. We largely ignore her complaints, and she usually eats something on her plate. I can guarantee though, that serving up this curry and she is a happy camper, as are the rest of us too!
- Thai fish cakes – I haven’t made these for almost a year, but they are definitely going on the menu soon. I love them so much.
- Roast beetroot and sugar snap pea salad – with little bits of creamy cheese, the crunch of pine nut, and the freshness of the peas, this is beautiful and tasty too!
So there you have it; four of our favourite Spring dinners.
