Flourless Chocolate Orange Cake

Last week it was one of my colleagues birthday.  She is one of those “lucky” people who can’t eat lots of things, but gluten is her biggest no no, so I was on the hunt for a good gluten free cake recipe. I remembered a flourless chocolate orange cake that CB had made before and looked it up, but in true style, we didn’t have all the ingredients. It was 8.30 at night, and I was on a mission, so undaunted, I took the basic idea and then modified the recipe to suit the ingredients I had. The cake turned out beautifully, and I fooled my colleagues into thinking that I am a superior cook. The cat may be out of the bag, if they read how easy the cake is to make. So easy in fact, that I made it again for dessert on Sunday night.

A fudgey chocolate and orange gluten free cake

Ingredients
  • 2 oranges
  • 100g dark chocolate
  • 100g butter
  • 8 eggs
  • 1½ c castor sugar
  • 300g almond meal
  • ½ c cocoa
Method
  1. Place the oranges in a saucepan of water and simmer for 30 minutes.
  2. Cut the oranges in half and remove any seeds. Allow the oranges to cool.
  3. Place the whole orange in a food processor and pulse until smooth.
  4. Melt the butter and chocolate together in a bowl over a saucepan of hot water. Allow to cool slightly.
  5. In a second bowl, whisk together the eggs and castor sugar until well combined.
  6. Stir the orange puree through the egg mixture
  7. Stir in the almond meal and cocoa.
  8. Stir through the chocolate and butter mixture.
  9. Pour into a 22cm lined spring form cake tin.
  10. Bake for an 1 hour 15 minutes at 180*c.
  11. Allow to cool in the tin.
  12. Dust with icing sugar and serve with cream or ice cream.
Notes
To make the orange garnish, thinly slice one orange into rounds.
Heat ½c sugar and ½c water together and bring to the simmer.
Place the orange rounds in the syrup and allow to simmer for 10 minutes. Leave the orange rounds to cool in the syrup.
Drain before serving.

I put the oranges on to boil, and then after I take them out, I pop the bowl with butter and chocolate on top of the same saucepan to use the residual heat to melt them. By the time all the ingredients are ready, the chocolate has melted and the orange has cooled down, and the whole thing actually only takes 15 minutes to pull together.

It’s been a tough few weeks on the farm. We got It’s been a tough few weeks on the farm. We got through shearing without a hitch (thankfully 🙏) but we’ve had a run of the flu followed by Covid run through the family since then. The kids and I have tested positive (this is my second time getting it 🦠) though so far C has managed to avoid it. There has been a lot of lying on the couch feeling pretty ordinary. Han had to reschedule her driving test for a 4th time due to Covid, which is disappointing for her because she wants her freedom and for us because it would be so much more convenient if she could drive herself places. Just to add in to the mix, our hot water system has chosen now as a good time to die so we’re on cold showers until we’re all out of iso. This is not meant to be a whinging post but sometimes life just sucks a bit and it’s good to be real. Fortunately, the sight of the fire going with a stack of wood next to it cheers us up. Things will improve soon. Onwards we go…

We’ve been busy spending time with friends and family, harvesting the last of the summer produce, as well as a short escape to explore the big smoke. After the craziness of last term it was the break we all needed. It’s back to school for me tomorrow, and the kids are back on Wednesday. Shearing starts soon and so it’s all systems go over the next few weeks.
Covid has made some late changes to our weekend pl Covid has made some late changes to our weekend plans so we are embracing the unexpected and doing not much at home. Plenty of time for hanging out on the dam and enjoy the perfect weather.
Autumn has arrived in the orchard and the apple tr Autumn has arrived in the orchard and the apple trees are full of fruit. Yesterday we filled five baskets of apples that had fallen off the trees. Then we had apple crumble for dessert last night. Between the orchard and the vegetable garden this time of year is always super busy as we deal with all the harvest. No so busy though, that I can’t grab the camera and snap a few pics.
On weekends he makes himself a hot milo and lies o On weekends he makes himself a hot milo and lies on the veranda in the sun, just chilling and enjoying the freedom (until mum grabs her camera at least 🙄🤣).
