Winter Warmer: Rhubarb Strawberry Crunch

It has been pretty chilly around here lately. July is always cold during the day, and even colder at night. When the weather gets cold, I love a warm dessert as an after dinner treat. Mostly we just have some stewed fruit and custard. Stewed peaches and plums (made with frozen peaches we picked during the summer) or apples and rhubarb picked fresh from our garden are my favourites. Origin LPG asked me try out some of their stove top warmer recipes for winter, and there was lots of rhubarb in the garden, so I couldn’t resist the rhubarb and strawberry crunch.

Rhubarb & Strawberry Crunch – Original recipe found here
Serves 4-6 (or 2 people a couple of times!)

Ingredients
1 bunch rhubarb (8-10 stalks)
¼ cup caster sugar
250g strawberries, halved
40g butter
2 tbs honey
½ cup rolled oats
½ cup chopped raw macadamias
1 tsp cinnamon
Grated zest and juice of 1 orange

Method
1. Cut the rhubarb into 6cm lengths.
2. Heat sugar, orange juice and zest in a medium saucepan until dissolved. 
3. Add rhubarb and strawberries. Cover and gently cook over low heat for 10-15 minutes or until rhubarb is just tender. Cool slightly 
4. Meanwhile heat a small frying pan over medium heat. Add butter, honey, oats, macadamias and cinnamon and cook, stirring, for 3-4 minutes or until golden and crisp.
5. Spoon into serving glasses and sprinkle with crumble.

6. Serve with custard or ice cream. 

Rhubarb and custard is one of those desserts that I have loved from my childhood, but I haven’t really converted Country Boy, until now. He loved that the rhubarb flavour was still there, but that the orange and strawberries added their own flavours.
I will definitely be whipping up the crumble topping and popping it on top of what ever fruit I have around. I love that I can just make it on top of the stove, without having to turn the oven on. It makes my fruit and custard just that little bit more special.

    What a great rhubarb idea, perfect for winter. Rhubarb is really underused but I love this idea. Great photographs too 😀

    That looks delicious and I love that it didn't have too much sugar in it. I am definitely one for hot desserts in winter though have had to lay off since my gestational diabetes diagnoses. Four weeks to go and I think I'm going to have to try this one. Donna Hay has a good balsamic strawberries recipe that I mix with rhubarb. What a combo!! Ill have to wait til next year with the rhubarb though as the chooks destroyed my patch so we won't get any this year. So sad!.       Love the idea of adding some balsamic vinegar – will definitely have to try that! I've been meaning to give the blog a proper upgrade for a while now. I still have a few things to fix up. I may have to bite the bullet and actually pay for some design work. Hence the sponsored posts – a chance to make a little cash to pay for my hobby lol.

We have been mulling over how to fix up the drivew We have been mulling over how to fix up the driveway and lead up to our house for a while. Currently it’s just a dumping ground for old bits of metal and a big pile of mulch, but C would like to create a turning area and put in a garden. First up though, there’s a huge old stump that needs to go. What better excuse is there to have a fire on Sunday afternoon? C and the kids jumped on the quad bike and trailer, and hauled back a big pile of sticks and logs to help the stump burn. Once the fire was going, marshmallows were found and roasted. No better way to spend time together.
Team work makes the dream work. We were asked rec Team work makes the dream work. 
We were asked recently whether we “make” our kids work on the farm. The answer is of course not. Having said that, all three love to help out whenever they can. They all work hard because they want to; because they take pride in working hard and contributing in a meaningful way to our family life; because they love living on our farm and don’t remember life before we moved here. Whether it be planting trees or doing sheep work or feeding animals, they all want to be involved. As a parent, nothing is better than watching them grow in skill and confidence as they work along side you. We’re so glad that we get to spend time with our three, working together.
We’ve had an unexpected addition to the family ☘️🐑. She is a lot easier to look after than the other family members but she does try to escape her yard and head butt people. Poddy lambs are super cute but they tend to think they are a human. Clover the lamb is sure that Meg is her mum. Can’t think why… 🤔🤣

It’s been a tough few weeks on the farm. We got It’s been a tough few weeks on the farm. We got through shearing without a hitch (thankfully 🙏) but we’ve had a run of the flu followed by Covid run through the family since then. The kids and I have tested positive (this is my second time getting it 🦠) though so far C has managed to avoid it. There has been a lot of lying on the couch feeling pretty ordinary. Han had to reschedule her driving test for a 4th time due to Covid, which is disappointing for her because she wants her freedom and for us because it would be so much more convenient if she could drive herself places. Just to add in to the mix, our hot water system has chosen now as a good time to die so we’re on cold showers until we’re all out of iso. This is not meant to be a whinging post but sometimes life just sucks a bit and it’s good to be real. Fortunately, the sight of the fire going with a stack of wood next to it cheers us up. Things will improve soon. Onwards we go…
