Because the girls primary school is so small, they don’t have a canteen. On Wednesdays parents take turns of cooking a hot meal to share, whilst on Mondays and Fridays the girls are allowed to take hot food to school. The food is then put into a pie warmer to be heated for lunch. Most kids take sausage rolls, and pies etc, but I have been trying to come up with some healthier alternatives to the processed junk, which I can just freeze and pull out in the morning before school.
Over the weekend we made some home made pizza pockets. The girls both thought they were much better than the shop bought variety, and they reheat nicely too!
If you’re school doesn’t let the kids heat up food at school, try heating them in the morning, wrapping in foil, and then in an insulating container to keep it hot.
- Dough
- 1½ cups warm water
- 2t yeast (14g)
- 1t sugar
- 2T olive oils
- 2t salt
- 4c plain flour
- Filling
- 200g of cheese - grated
- 3 slices of ham - diced
- 1small tin of pineapple - finely chopped
- 2T tomato paste
- 1T chopped fresh herbs
- 2T milk
- Place the warm water, yeast, and sugar into a large bowl. Place in a warm place for 5 minutes.
- Add the remaining ingredients and mix to form a dough.
- Knead the dough on the bench for 10 minutes until it is smooth, and elastic.
- Place the dough back into the bowl. Cover with cling wrap, and place in a warm place to allow the dough to rise. The dough should double in size.
- Mix all filling ingredients together in a bowl.
- Turn the dough out onto a clean bench, and knead again
- Divide the dough into 12 equal sized balls.
- Roll one ball of dough out into a circle.
- Place a heaped spoonful of filling into the centre of the dough.
- Brush a small amount of milk around the edge of the dough, and then use your fingers to crimp it together to form a semi circular parcel.
- Place the parcel on a baking tray.
- Repeat with the remaining ingredients.
- Allow the parcels to sit for 20 minutes in a warm place to allow the dough to rise again.
- Bake at 200*c for 20 minutes until lightly golden.

I mades some pizza pockets the other week too, and they were so yummy! I like the idea of making them kind of pasty shaped. I was cutting out circles and sticking them on top of each other, which was a lot of work!

They look delicious Jo. My son would love those in his lunch box. He hasn't had tuckshop all year and I don't think he would anyway. There's nothing appealing on the menu compared to what he gets in his lunchbox! LOL

I like this. We have a bunch of pizza dough in the freezer (we have a wood-fired pizza oven that is hideously wet so we can't use it at the moment), and this is the perfect thing for us to try.
My girls might actually EAT something I make. Now that would be a miracle.
