Over the weekend the Country Boy decided to make rocky road. I’m not sure where the inspiration came from but who am I to question his whims. I love to eat rocky road so we are clearly a match made in heaven.
The girls love to help cook, particularly when there is an outside chance that they will get to lick the bowls (though the Country Boy gives them some competition). If you are nervous about young kids using knives then rocky road is perfect because you can get away with not needing a knife. I have a pair of safety scissors in the kitchen so that the kids can use them to cut food up. Scissors are much better for cutting up marshmallows than knives!
What I like about rocky road is that it is really just a whole lot of yummy things covered in chocolate thus making it even yummier.
This time CB used hazelnuts, jelly raspberries, coconut, and of course marshmallows but there are so many other things you can use; all different nuts (macadamias are my favourite), chopped up Turkish delight, sultanas, craisins, broken up scotch finger biscuits, glace cherries, chopped up licorice , and fresh raspberries (if you are eating the rocky road fairly quickly) just to name a few! And this before you even consider the different chocolates you can use. One of my all time favourites was craisins, pistachio, Turkish delight and marshmallows in white chocolate.
Rocky road is truly one of the most creative foods you can come up with. You are really only limited by your imagination.
