Pear And Ginger Cake

  • 2 pears
  • 1c sugar
  • 3c (750ml) water
  • 1 vanilla pod
  • 1 cinnamon quill
  • 1½ c SR flour
  • 1 c brown sugar
  • 1½ T ground ginger
  • 1t ground cinnamon
  • 150g butter
  • 3 eggs - lightly beaten
  • ¼ c (60ml) milk
  1. In a sauce pan place the sugar, water, scraped vanilla pod, and cinnamon quill.
  2. Bring to the simmer.
  3. Peel the pears and place in the syrup. Simmer for 15 minutes.
  4. Allow the pears to cool.
  5. Remove the pears and allow to drain.
  6. Preheat the oven to 180*c.
  7. Place the flour, sugar, ginger, and cinnamon in a bowl, and stir to combine.
  8. Place the butter into a microwave proof jug and melt in the microwave (approx 1 minute).
  9. Pour the butter, eggs, and milk into the dry ingredients and mix until combined.
  10. Pour the batter into a greased and lined 22 cm cake tin.
  11. Cut the pears in half and remove the core.
  12. Thinly slice the pear.
  13. Arrange the pear on top of the cake.
  14. Bake for 55 minutes.
I popped a couple of extra pears into the syrup to poach. That way I had a few spare for dessert - yummy!
