Zucchini, Feta And Mint Fritters

Ingredients
  • 500g zucchini
  • 3T chopped chives or scallions
  • 125g feta cheese
  • ¼ c chopped mint
  • 1 chilli finely chopped (optional)
  • ¾c flour
  • 5 eggs
  • salt and pepper
  • oil for frying
Method
  1. Grate or finely shred the zucchini.
  2. Finely dice the feta cheese
  3. Add the zucchini, chives, feta, mint, chilli, and flour to a bowl. Stir gently to combine.
  4. Add the eggs, salt, and pepper and stir until evenly mixed.
  5. Heat a fry pan on medium.
  6. Add a little oil to the pan.
  7. Fry spoonfuls of mixture, flipping once one side is golden.
  8. Once the fritters are cooked through, drain on a paper towel.
  9. Serve with sour cream and sweet chilli sauce.
Notes
I used my Japanese mandolin to shred the zucchini as I find it doesn't squash it as much as a regular grater. If you find the zucchini is too wet, squeeze the extra moisture out before cooking.
