Mulberry Yoghurt Cake

Ingredients
  • 150g butter
  • 1c sugar
  • 3 eggs
  • 1t vanilla extract
  • 1c yoghurt *
  • 2c SR flour
  • 1½c mulberries - use raspberries or blackberries if you don't have mulberries
Method
  1. Preheat the oven to 180*c
  2. Cream the butter and sugar together.
  3. Whisk in the egg and vanilla essence
  4. Beat in the yoghurt.
  5. Stir in the flour.
  6. Line a loaf tin with baking paper.
  7. Spoon a third of the mixture into the loaf tin.
  8. Spread a third of the mulberries into the mixture.
  9. Repeat twice more until all the mixture has been used up.
  10. Bake for one hour, or until the cake has set.
Notes
*I used berry yoghurt because that is what we had - vanilla or natural yoghurt would work well too
