Chocolate bread and butter pudding

  • 10 slices bread
  • 50g butter - softened
  • ½c craisins
  • 250g dark chocolate - roughly chopped
  • 2c cream
  • 2c milk
  • zest of 1 orange
  • 6 eggs
  • ⅔ c sugar
  • 2T cocoa powder
  1. Grease a large oven proof dish (a lasagna dish would be perfect).
  2. Butter each piece of bread.
  3. Cut into ⅛ triangles and pile randomly in oven proof dish - I leave crusts on, but you can remove them if you like.
  4. Sprinkle the craisins over the top of the bread.
  5. In a saucepan, place the  chocolate, cream, milk, and orange zest. Heat until the chocolate has melted. Allow to cool slightly.
  6. In a large bowl, whisk the eggs, sugar and cocoa. Slowly add in the milk mixture, whisking as you do, until it is all well combined.
  7. Pour the mixture through a sieve and over the bread in the oven proof dish. Be sure to cover all the bread.
  8. Allow the mixture to stand for 10 minutes so that the egg mixture soaks into the bread.
  9. Bake at 170*c for 35 minutes or until the egg has set.
  10. Dust with icing sugar to serve if you wish.
