Zucchini, Feta And Mint Fritters

It’s zucchini season here. Zucchinis are one of those vegetables I can take or leave. They taste rather bland and (to my mind) need something added to them to make them tasty. Despite my ambivalence about eating zucchinis, Country Boy is enthusiastic about growing them. Probably because they just grow so darn well. It’s not unusual for Country Boy to bring in 8 or 10 every other day. What’s worse is that if you accidentally leave a zucchini on the plant for 24 hours too long, they explode in to gigantic freak show vegetables. Suddenly one giant zucchini is enough to feed the family for a week!

Zucchini Fritters

I’m always on the look out for new ways to use of the annual zucchini glut, so I tried combining zucchini with some feta we had in the fridge, and some mint from the garden. They turned out beautifully. If you’re after another tasty way to use up your zucchinis, try these parmesan crusted zucchinis, which are another fave around here.

Serves: 25
Ingredients
  • 500g zucchini
  • 3T chopped chives or scallions
  • 125g feta cheese
  • ¼ c chopped mint
  • 1 chilli finely chopped (optional)
  • ¾c flour
  • 5 eggs
  • salt and pepper
  • oil for frying
Method
  1. Grate or finely shred the zucchini.
  2. Finely dice the feta cheese
  3. Add the zucchini, chives, feta, mint, chilli, and flour to a bowl. Stir gently to combine.
  4. Add the eggs, salt, and pepper and stir until evenly mixed.
  5. Heat a fry pan on medium.
  6. Add a little oil to the pan.
  7. Fry spoonfuls of mixture, flipping once one side is golden.
  8. Once the fritters are cooked through, drain on a paper towel.
  9. Serve with sour cream and sweet chilli sauce.
Notes
I used my Japanese mandolin to shred the zucchini as I find it doesn't squash it as much as a regular grater. If you find the zucchini is too wet, squeeze the extra moisture out before cooking.

We’re getting to the end of the summer break 😭. The kids have been staying up late, sleeping in, swimming and kayaking on the dam, reading and watching movies, and giving the LEGO a good run. I’ve been reading, sorting out things (it’s what I do in January), binge watching Netflix, and cooking. In the evenings I go for a walk and always arrive back to this view as the sun is setting. Also, I haven’t taken down the Christmas lights yet, and I probably won’t for a while longer because they are so pretty. Not ready for summer to end!

It’s been a busy old day around here. Washing be It’s been a busy old day around here. Washing bed linen, getting rid of the cobwebs that spring up so quickly. I even pulled everything out on the bathroom vanity and gave it a purge and deep clean. I have no idea how half the stuff got there 🤷‍♀️. For me January is a time to reset the house, de clutter and get sorted. Something about a new year perhaps? 🤔
Anyhow, here’s a pic of my freshly decobwebbed (totally a word) window  which makes me happy- just don’t look too closely!
I’ve been baking today, in between watching the I’ve been baking today, in between watching the news coming out of the US in disbelief. The mulberry tree has begun to fruit so I whipped up this mulberry yoghurt cake. It’s delicious and easy. The mulberries go all jammy and the cake is soft and not too sweet. Perfect comfort food with a hot drink when it feels like the world has gone mad.
We’re beginning 2021 in the best way; at the bea We’re beginning 2021 in the best way; at the beach with cousins. Despite the occasional rain we are enjoying swimming, playing board games and just hanging out together.
