Every year we have leftovers to use up after Christmas. I love leftovers. All those treats and easy meals in the fridge just waiting to be eaten. It makes Christmas last even longer. Eventually though there are all those bits and pieces that are left after all the “good” stuff has gone. You know, the end of the cheese platter, the bits of roast vegetables, and the end of the ham. Of course, by this time the thought of another ham and salad meal makes you shudder. So what to do?
Make some fritters of course.
Pull all those bits an pieces out of the fridge. Dice or grate them up. Whack them in a batter and cook them up. Then stand back as the whole family hoovers them up.
Post Christmas Fritters
3 cups of diced left overs – think roast meat, chicken, ham, seafood, roasted vegetables (pumpkin would be delicious), bits that didn’t get used in salads, the ends of cheese from the platter. I used carrots and capsicum, ham, cheese, and a handful of chives from the garden.
1 1/2 c SR flour
1 3/4c milk
salt and pepper
oil for frying
