Passionfruit Cordial

Once a week we get a box of fruit delivered to town. One day soon I hope our fruit will come from our orchard, but that is a few years off yet! In the meantime we order our fruit and get it delivered. Inevitably, the kids go through phases where one week they eat all the bananas in two days, so then I buy twice as many bananas the next week, and then of course, they don’t eat any bananas the next week. 
As a result of my kids unpredictable eating habits, I had a whole heap of passion fruits sitting in the fruit bowl uneaten. It seemed like the perfect opportunity to make some passion fruit cordial.

Ingredients
3 cups sugar
3 cups water
1 lemon
10 passion fruits (makes 3/4c pulp)

Method
1. In a saucepan combine sugar, water and the juice of one lemon.
2. Bring the mixture to the boil, stirring occasionally, to make sure that all the sugar is dissolved.
3. Once the mixture has boiled, remove from the heat, and then stir in the passion fruit pulp.
4. Allow to cool and infuse.
5. To serve pour a small amount of syrup into a glass, and top with cold water.
